The Daffodil Cocktail

I’m really not a winter person.  Many people rave about the comforts of gathering around a cosy log fire in a big snuggly jumper, but that’s just not me.  I look forward to this time of year when the mornings and evenings get a bit lighter, the clocks get ready to spring forward, and the crocuses raise their heads.  This is a cocktail inspired by the most optimistic of flowers – a daffodil, which is a real sign that spring is on its way.   

Makes 2:

  • 2 shots of limoncello
  • 2 shots of gin
  • 2 shots of Cointreau
  • 2 shots of vodka
  • 4 shots of sparkly water
  • 2 cocktail cherries

Put plenty of ice into a cocktail shaker, add the spirits and shake gently until nicely cooled.  Pop a cocktail cherry into each of the two cocktail glasses and fill with the pale-yellow cocktail.  Top the glasses up with the sparkly water and raise a glass to springtime.
