HuddersFoodie BBQ Special: Prawn and Chorizo Skewers & Asparagus and Crispy Ham Bundles

Bored of burgers?  Here is some inspiration if you fancy a change from the predictable barbecue staples of bangers and burgers.  Tasty, easy to make recipes that mean that you can enjoy the great weather without having to spend ages in the kitchen doing the barbecue prep.  So get the charcoal out, chill a few beers and enjoy the sunshine.

Prawn and Chorizo Skewers
Makes 4 skewers
You will need:
24 raw king prawns
24 thin slices of chorizo
Olive Oil

  • If you’re using wooden skewers, you’ll need to soak these in water for about 30 minutes beforehand, so that they don’t burn. 
  • Thread the prawns onto the skewers, alternating with a slice of chorizo, folded into 4, until you have 6 prawns and 6 chorizo slices on each skewer. 
  • Brush with a little olive oil, and barbecue for 2-3 minutes on each side, until the prawns have turned a nice pink colour.

Asparagus and Crispy Ham Bundles

For 8 bundles you will need:
8 asparagus spears
8 slices Serrano or Parma ham
Olive Oil

  • Trim the asparagus spears, removing the tough bit of stalk at the bottom. 
  • Roll the asparagus up in a slice of ham, and brush lightly with olive oil.  Barbecue these for about 5 minutes, turning regularly, until the ham is lovely and crispy.
