Have a Good Summer

Like a warm sunset after a hot summer day, this goes down well in the evening as a pre-dinner aperitif. There are loads of deliciously flavoured gins around these days, but this one suits a classic ‘plain’ gin; the flavour is enhanced by the Aperol, triple sec and lemon juice, so you shouldn’t need a fancy craft gin for this. Tip – this tastes better if you are wearing flip flops.

Makes 2:
4 shots of gin
2 shots of Aperol
2 shots of triple sec
1 shot of lemon juice
2 shots of sparkling water
2 cocktail cherries



Put plenty of ice into a cocktail shaker, then add the remaining ingredients except the sparkling water and give it a good shake to cool off. Drop a cocktail cherry into the bottom of each of two martini glasses, then decant the cocktail from the ice, into the glasses. Top up each drink with the sparkling water and sip slowly.
